HACCP (Hazards Analysis and Critical Control Points) is a food safety management system that helps organizations identify and control potential food safety hazards. The course covers the following topics:

  • Understanding of HACCP principles: The HACCP program covers the principles and practices of hazards analysis and critical control points, including the systematic approach to identifying and controlling potential hazards in the food production and preparation process.

  • Ability to develop and implement HACCP plans: Upon completion of the HACCP program, you will have the skills to develop and implement effective HACCP plans that meet the needs of your organization and ensure the safety of the food products produced.
  • Understanding of critical control points and preventive measures: The HACCP program covers the importance of critical control points and preventive measures in ensuring the safety of food products, including how to implement and monitor these measures effectively.

Training sessions will be conducted through Microsoft Team Meetings in an online format, or through LMS or face-to-face delivery. Invitations for the meeting will be distributed one day before the commencement of the training program. Training is either delivered by an accredited training provider or an affiliate training center.

Training should emphasize on the following contents;

  • Introduction to HACCP: Definition and purpose of HACCP, history, and development of HACCP, HACCP principles, and their application in the food industry.
  • Hazard Analysis: Identification of potential hazards in food production. evaluation of the likelihood and severity of hazards, and determination of critical control points (CCPs).
  • Critical Control Points: Design and implementation of control measures at CCPs, monitoring and verification of CCPs, corrective actions, and record-keeping.
  • Implementation and Maintenance of HACCP: Developing a HACCP plantraining personnel, verifying and validating the HACCP system, and continuous improvement of the HACCP system.
  • HACCP in different sectors of the food industry: Meat and poultry, dairy, seafood, fresh fruits and vegetables, and beverages.
  • Case studies and real-world examples: Hands-on practice in conducting hazard analysis and identifying critical control points, discussion, and analysis of real-world HACCP implementation in the food industry.
  • HACCP Auditing and Certification: Auditing techniques and procedures, HACCP certification standards and requirements.
  • Current challenges and future trends in HACCP: Food safety regulations and compliance, HACCP in the global food industry, and new technologies and innovations in HACCP.

This course is designed to help you reach your goals at your own pace and on your schedule. Instructional contact time must be a minimum of 8 hours. Most students intend to complete their studies via online learning within 1 month.

All students must achieve a minimum 70% score to successfully pass the examination which shall be taken online through AISP assigned portal. After successful completion of the examination, students will get their results immediately on their registered emails. This is an open-book exam and students are permitted to use a separate browser window to review course content while taking the exam. If you do not pass the examination you may retake the examination. Students are allowed to take an exam three times within one month. During this time, students should review the course material to improve their understanding.
